SPINACH - CAULIFLOWER -
ARTICHOKE SALAD
 
2 qts. spinach leaves & greens you like
2 c. raw cauliflower
2 cans artichoke hearts, halved
1 onion (Bermuda)
1/2 c. sliced ripe olives and/or 2 cups canned carrots (opt.)

Marinate all but greens (spinach and lettuce) with Italian dressing for at least 2 hours. You can marinate longer if desired. When ready to serve, drain marinate from vegetable. Toss with greens. Add Green Goddess or other dressing or just toss with marinate. Serves 6 to 8.
