WILTED SOUTHWEST SPINACH SALAD 
1 ripe avocado
2 tsp. lime juice
6 c. loosely packed fresh spinach, torn into bite-sized pieces
1/2 c. red onion rings
1/2 c. thinly sliced radishes
3 slices bacon, diced
1/3 c. pace picante sauce
2 tbsp. water
1/4 tsp. sugar
1/4 tsp. ground cumin

Peel, seed and cut avocado into 1/2 inch wedges; cut each wedge in half. Gently toss avocado in lime juice to coat. Combine avocado, spinach, onions and radishes; set aside.

Cook bacon in skillet until crisp; add picante sauce, water, sugar and cumin. Bring to a boil. To serve, pour hot dressing over salad. Toss lightly and serve immediately. Makes 6 servings.
