I had third of a cup of cranberry relish and fourth cup of walnut to this recipe. My church loved them.

I added cinnamon, cardamon, and peaches. The muffins were great. Walnuts would have made them even better, but I didn't have any on hand. Highly recommend!

By the way, this works well with the Gluten-free Bisquick if you have a gluten free diet

I used Splenda instead of sugar and a mini muffin tin so I only baked for 12 minutes. Banana muffins came out perfect.

 Becky (Maryland) says:
Very good. I cut up a large apple, added cinnamon and a splash of vanilla. 15 minutes was a little too long for me - next time I'll start checking at 12.

For gluten free use 1 cup of milk not 2/3, it has a better consistency.

Think sugar could be increased to 1/2 cup to be a sweet muffin.

I made these years ago when the recipe was on the box and in the great little cookbook my mother had and they were fantastic. I also made them with additional sugar, and my brother loved them even more. I think I used 2/3 cup sugar. Nowadays, if I want it sweeter I'll just add some stevia.

 Paula B. (Rhode Island) says:
I made mini muffins that were done at nine minutes, but watch the time as I have a fast cooking oven. Per other comments I upped the sugar, choosing to use a half cup. I also added a dash of vanilla, some cinnamon and frozen strawberries that I wanted to use up. This was a fast and easy recipe calling for ingredients you probably have on hand. The texture was lovely but I think the flavor still needs work, a little bland even with the berries.
