N.'S SWEET POTATO CINNAMON
MUFFINS
 
3/4 c. cooked mashed sweet potatoes
1/4 c. melted butter
2/3 c. milk
1/4 tsp. vanilla
4 tsp. double acting baking powder
1 1/4 c. flour
2 tbsp. sugar
1 tsp. salt
1/4 tsp. cinnamon

Preheat oven to 450 degrees. Beat 1/4 cup melted butter into 3/4 cup cooked mashed sweet potatoes. Stir in 2/3 cup milk to 1/4 teaspoon vanilla. Sift them measure 1/4 cups flour. Resift with: 2 tbsp. sugar 1 tsp. salt 1/4 tsp. ground cinnamon

Stir the sifted ingredients into the sweet potato mixture. Spoon dough into muffin tins lined with paper cups. Bake at 450 degrees for about 15 minutes. Fill cups 1/2 full. Yield: 12 large muffins.
