STRAWBERRY COOKIE PIZZA | |
1 (20 oz.) roll refrigerated sugar cookie dough 1 (3 oz.) pkgs. cream cheese, softened 2 tbsp. sugar 2 tbsp. orange juice 1 sm. banana 1 1/2 c. sliced strawberries 1/4 to 1/2 c. drained pineapple tidbits 1/4 c. strawberry Jello or jam Cut half of cookie dough into 1/2 inch thick slices (chill remaining dough for later or bake according to package directions). Arrange the sliced dough or on an ungreased baking sheet to form an 8 inch circle or smaller (pizza pan). Bake the cookie crust in a 400 degree oven for about 12 minutes or until the crust is done. Cool for 5 minutes on the baking sheet. Using a spatula, loosen the edges of the crust and transfer to a wire rack to cool. In a small mixing bowl, beat the cream cheese, sugar and 2 tablespoons of orange juice with an electric mixer until fluffy. Spread over the cooled crust. Thinly angle slice the banana. Brush with additional orange juice to prevent browning. Arrange evenly over crust, and cream cheese, strawberries and pineapple. Heat the jelly or jam on low heat until melted. Drizzle over the pizza into wedges to serve. Store any remaining pizza covered in the refrigerator. Makes 6 servings. |
