SKILLET STRAWBERRY COOKIES 
1 (8 oz.) pkg. dates (small pieces)
1/2 c. coconut
1/2 c. sugar
4 tbsp. butter
1 1/2 c. Rice Krispies
1 egg, slightly beaten
1 tsp. vanilla
1/2 c. pecans
Dash salt
2 jars red sugar crystals
1 can green frosting

In iron skillet, put dates, coconut, sugar, butter, egg and salt. Cook and stir over medium-low heat until thick and bubbling. Remove from heat. Stir in Rice Krispies, nuts and vanilla; cool 10 minutes until cool enough to handle.

Use about 1 tablespoon - mix and form into strawberry shape. Roll in red sugar and trim top with green icing. Makes about 3 dozen cookies.

I've made these every Christmas since I was a kid - we roll them into balls and in red and green colored sugar (I guess that doesn't make "strawberries" but they are still delicious little sugar bombs). It's definitely an eat one and walk away sort of treat, which I love! It's great to see the recipe here - I misplaced mom's this year. Apparently she got it from the newspaper back in the early 1960's.
