SKILLET COOKIES 
1 stick butter
3/4 c. sugar
1 c. chopped dates
2 eggs, beaten well
1 c. broken pecans
1 c. Rice Krispies
1 tsp. vanilla
1 1/2 c. coconut

In large skillet over low heat barely melt butter. Stir in sugar, dates and eggs. Continue stirring and cook slowly until thick, 10 minutes or more. After mixture thickens, remove from heat. Stir in pecans, Rice Krispies and vanilla. Cool. Spread coconut out on waxed paper. Roll teaspoonfuls of cooled mixture in coconut. Makes 3 1/2 dozen ball shaped cookies.
