MEXICAN MACARONI CASSEROLE 
1 lb lean ground beef or turkey
1 can Rotel tomatoes (drained)
1 box Kraft Macaroni & Cheese (prepared)
1 package of taco seasoning
1 can corn, drained
1/2 package HIDDEN VALLEY® Ranch dip (powder)
1 cup grated cheddar cheese

Preheat oven to 350°F.

Prepare macaroni and cheese as directed. Brown ground meat and drain, add taco seasoning to ground meat. In a large bowl, add prepared macaroni and cheese, ground beef, Rotel tomatoes, corn and dip.

Mix well, place in casserole dish. Sprinkle with grated cheese and bake 45 minutes.

Make 6 servings.

I made this tonight, 3/24/11, with some family adjustment. I also added rinsed black beans and instead of a whole can of Rotel I just used 4 big tablespoons (only because I had a huge can not a 10 oz can). I forgot to pick up the hidden valley when I went to the store so I omitted it. I also used ground turkey. The recipe turned out great and it would have been even without the family adjustments (that is a habit I have).

Made the casserole, put homemade salsa instead the tomatoes. Added some nacho chips on the top then the cheese. Nice meal.

Followed recipe to a T but I did add crushed corn chips on top. It was a nice extra touch. I also doubled the Mac n cheese, that worked well. I would add cheese on top a few mins before the dish is done. Putting it on for the entire cook time caused the cheese to burn pretty bad. Overall very tasty. I will make this again!

Just took this out of oven. Is great. Used ground turkey, added chopped onion... then followed recipe exact. Will use leftovers - to fill taco shells - with the usual chopped lettuce, tomato & onion... with Salsa. This is a definite keeper!
