A SIMPLE CURRY SAUCE
This is excellent for dressing up leftovers or for using when making casseroles.

1 tbsp. curry powder
1 tbsp. flour
1 tbsp. butter
1/2 tsp. salt
1 cup whole milk or coconut milk

Rub together butter and flour until mixed. Stir in curry powder. Melt this slowly in milk, stirring until dissolved to avoid lumps. (If lumps happen, process in a blender until smooth).

Use this very basic and easy to prepare sauce to heat cooked and cleaned shrimp, lobster or crab meat (cooked - both imitation and real) or chicken.

Taste and add salt and pepper, as needed (the full amount of the salt may not be required).

A Simple Curry Sauce

This is so so easy and the results are the best. Used semi-skimmed milk and pushed lumps through a tea bag strainer, slurping as I am typing. Yum yum!

Slurping lumps as a mark of quality. Explains a lot about "British cuisine."

Man, this was excellent! I did not even have flour so I used pancake mix and put in some bell peppers and onion. It was tasty!!

I've used both coconut milk and regular milk. To my surprise the milk smother and tasted better. If you like coconut try coconut oil. Its great and is better for you then butter. Good job Belle!

It's soo delicious! I've added some chopped onion to it with spices (turmeric, cumin, and coriander) and cooked chicken in this sauce. I got surprisingly good chicken curry. It's reallly easy. Thanks Belle!

I didn't have curry powder so I used garam masala instead. This was a mistake--it was overpoweringly spicy. However, the consistency of the sauce was very good. Next time I'll use a better mix of spices (turmeric and coriander, maybe).

I make it all the time now, I use skim milk and it makes it very smooth and extra low-fat. I also add extra curry powder and spices such as chili powder, as well as grilled vegetables, so good!

This recipe was simple and turned out great on the first try! I added a couple of other spices for taste but it would have been just as good without them. I made about a liter of this sauce and frozen it, now I just use it whenever. =)

 Daz (Australia) replies:
HI TINA (Ontario), Would you please advise me the spices you used in this recipe - your comment merely said you'd 'added a couple of other spices'. What were they in total (cumin, coriander, etc) Thank you! Daz (West Australia)

Making this now, I used coconut oil instead of butter. Put the paste in the pot and melted it slowly before whisking in the coconut milk and no problems with milk.

It was good and creamy but need a bit more spice maybe it was the curry powder I was using. Maybe a chili or something to perk it up but if you aren't wanting a spicy curry then use this but would recommend it. Ty to the person who added it.

Thanks for the recipe! I was trying to find a simple curry sauce recipe for quite some time. Used it on chicken filets. Very good

 Alexis (Michigan) says:
I melted the butter, then added the flour, and once it became a paste I added in the milk and whisked it pretty often. I used more than the recommended curry powder and added chili powder plus salt and pepper. The salt really brought out the flavor to me, I tasted it without salt and got a bit worried. Super easy to make!

Loved the basic curry sauce. Used it over baked cod fish... Mmmmmmmm. I used skim milk and it tasted great, although it was a little thinner. Can't wait to try it over pork, chicken and baked ham. Many thanks!

Used coconut butter instead of butter, added a few butter buds for taste, added a few drops of tobasco. Preheating the milk in a microwave makes for very easy blending without lumps. Excellent and tasty results.
