HOMEMADE DOUGHNUTS 
3 1/2 c. all-purpose flour
1 c. sugar
3 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. nutmeg
2 tbsp. soft shortening
2 eggs
3/4 c. milk

Heat oil (2 to 4 inches) on high. Measure 1 1/2 cups flour and all remaining ingredients in large mixer bowl. Blend on low speed, scraping bowl constantly, stirring in remaining flour. Put dough on well floured surface. Roll around lightly to coat with flour. Roll dough 3/8 inch thick. Cut with floured doughnut cutter.

With wide spatula, slide doughnuts into hot oil, turning them when they rise to the surface. Cook 2 to 3 minutes or until golden brown on both sides. Remove carefully from oil; do not prick surface. Drain. Serve plain, sugared, or frosted. Makes 2 dozen doughnuts.

If using self-rising flour, omit baking powder and salt.

Good recipe, only one thing though - do NOT set the stove to high. Doing so (at least using my stove) caused the donuts to burn within a minute. Depending on the power of your stove, heat the oil in med-hi setting to get it hot and then lower it to low, put the donuts in after 5-10 minutes. This lets them cook through and they won't get a crunchy blackened shell.

Good Taste.. I added 4 cups flour because the dough was very sticky. I think you could added flavorings to these.. lemon, orange, vanilla, and they would be great. Will make again.

These donuts were just OK for us. The dough was easy to work with, but they were a little too heavy and not much in the flavor department. I will look for another cake donut recipe.
