POST RAISIN BRAN MUFFINS 
1 (15 oz.) box Post Raisin Bran
1 c. oil
1 qt. buttermilk
5 tsp. baking soda
3 c. sugar
4 eggs, beaten
5 c. all purpose flour
1 tsp. salt

Mix all dry ingredients in large pan. Add eggs, oil, and buttermilk. Mix well. Store in covered container in refrigerator; use as needed within 6 weeks. Fill muffin pan 2/3 full and bake at 400 degrees for 15-20 minutes.

This recipe is amazing!! I grew up with these and never got tired of them. I however, prefer to soak the cereal in the buttermilk till soggy, then add wet ingredients. It keeps well for several weeks in the fridge and are a great snack for the kids. Love these muffins!!

I love this muffin recipe! However, I am quite frugal, so instead of heating up the oven several times during the week, I bake them all and freeze them. Since there are only the two of us now, it's simple to pop one in the microwave and have a fresh, hot muffin for breakfast!
