SWEET POTATO MUFFINS 
1 1/4 c. sugar
1 1/4 c. cooked mashed sweet potatoes or yams, fresh or canned
1 stick butter, room temperature
2 lg. eggs, room temperature
1 1/2 c. flour
2 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. salt
1 c. milk
1/2 c. chopped raisins
1/4 c. chopped walnuts or pecans
2 tbsp. sugar
1/4 tsp. cinnamon

Grease 24 muffin cups or use paper liners. Preheat oven to 400 degrees. Beat sugar, sweet potatoes and butter until smooth. Add eggs and blend well. Sift together flour, baking powder, spices and salt. Add alternately with milk to sweet potato mixture, stirring just to blend. Do not overmix. Fold in raisins and nuts. Spoon into muffin cups and sprinkle each with cinnamon/sugar mixture. Bake 25 to 30 minutes or until muffins test done. May be frozen and reheated.

This was a hit! I did not have raisins so I used some chocolate chips and also threw in about 1/4 cup shredded coconut. Also, a tbs of chia seeds. My 6 year old girls and husband ate this up! I used a smaller muffin size and it only took 20 minutes. Now, I have to make a second batch! Yummy!

Made these with leftover sweet potato casserole. Turned out delicious even though I omitted topping. Craisins were used in place of raisins.
