SWEET POTATO CORN MUFFIN 
1 1/2 c. cooked sweet potatoes
1/2 c. buttermilk
1/3 c. butter
2 eggs
1 c. yellow corn meal
1 c. all-purpose
1/3 c. sugar
2 1/2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
1/2 tsp. allspice

Mash sweet potatoes, combine with buttermilk, butter, eggs. Combine all dry ingredients. Mix liquid and dry ingredients together. Bake 15 minutes at 400 degrees in muffin pan.
