SWEET POTATO BREAD - MUFFINS 
3 c. sugar
4 eggs
1 c. oil
2 c. sweet potatoes, cooked & mashed
2/3 c. water
3 1/3 c. self-rising flour
2 tbsp. cinnamon
1 tsp. nutmeg
2 tsp. allspice
1 c. nuts (optional)
1 c. raisins (optional)

Preheat oven to 350 degrees. Mix ingredients in large bowl. Pour into 2 large loaf pans. Bake approximately 1 hour or pour into muffin pans (makes 36). Bake about 15 minutes or until done.
