THE BEST CHOCOLATE CHIP OATMEAL
COOKIES WITH COCONUT AND RAISINS
 
1 c. butter
1 c. brown sugar
1 c. granulated sugar
2 eggs
1 tsp. vanilla
1 1/2 c. quick oats
1 1/2 c. flour
1 tsp. baking soda
1/2 tsp. baking powder
1 c. raisins
1 c. walnuts
6 oz. pkg. semi-sweet chocolate chips
1/2 c. flaked coconut

In the large bowl of an electric mixer, beat together butter, sugars, eggs and vanilla until mixture is light, about 2 minutes. Stir in remaining ingredients until blended. Drop batter by the heaping tablespoonful on a greased cookie sheet. Bake at 350 degrees for about 10 to 12 minutes or until cookies are very lightly browned. Don't try to double the recipe.

I've made this recipe for many years now, and this is the cookie I most frequently bake for my family. Sometimes I use dried blueberries instead of raisins, and almonds and cashews instead of the walnuts. They consistently turn out perfect, and are consumed very quickly in my house.
