SWEET POTATO MUFFINS 
2 c. mashed sweet potatoes
1 3/4 c. sugar
3 eggs
2 3/4 c. self-rising flour
1 c. oil
2/3 c. water
1 tbsp. cinnamon
1 tbsp. vanilla

If using fresh sweet potatoes, cook and mash them without adding anything. If using canned, drain and mash without adding anything. Combine ingredients, mixing as little as possible. Mix only until all ingredients are mixed together. Pour into greased muffin pans and bake 28-30 minutes at 350°F.
