BEST EVER FISH BATTER 
FISH BATTER:

1 cup all-purpose flour
1/2 cup corn flour
1 tsp. baking powder
1/2 tsp. turmeric
salt and pepper, to taste
soda water to combine
2 egg whites, whipped to soft peaks

Place flours, baking powder, turmeric and salt and pepper into a bowl. Add soda water until the mixture resembles double cream in texture. Gently fold in the egg whites. It should be soft and fluffy when the whites are incorporated.

To use, dredge the fish fillets in flour and pass through the batter. Fry immediately in hot oil.

Awesome batter recipe! I've tried several different ones and this one is by far my favorite. The fish comes out super crispy and the batter is not too thick or thin, just perfect! Definitely a new staple in our house.
