CARL'S SUMMER'S BEST HOT DOG
CHILI
 
2 lb. ground beef
1 onion (med to large finely minced)
3 tbsp. minced garlic
1/4 cup ketchup
2 tbsp. yellow mustard
2 tbsp. cider vinegar (or less to taste)
2 tbsp. Worcestershire sauce
1 tbsp. coarse ground black pepper
1/4 tsp. ground red pepper
1/4 tsp. ground cumin
1 tbsp. chili powder
1 tbsp. olive oil
4 to 6 oz. tomato sauce (more for thinner sauce but not to exceed 1 can, adjust chili powder if using 1 can)

Brown and drain ground beef then set it aside. In a medium to large mixing bowl combine onion, garlic, ketchup, mustard, vinegar, Worcestershire sauce, black pepper, red pepper, cumin, and chili powder. Mix well together. Put ground beef back in pan and add sauce mixture then mix well together. Add tomato sauce to desired thickness. If you desire thinner sauce add more tomato sauce but add chili powder to accommodate it. Allow to simmer for at lease an hour over low heat.

Prep time: 20 to 30 minutes.
