SWEET AND SOUR PICKLED CUCUMBERS
COPENHAGEN
 
4 lg. cucumbers, sliced thin
2 tbsp. salt
2 c. vinegar
1 c. sugar
1/2 tsp. black pepper
Chopped parsley to taste

Peel cucumbers and slice thin. Sprinkle with salt and let stand one hour. Wash, drain and squeeze them until dry. In a saucepan, combine vinegar, sugar, pepper and parsley. Bring mixture to a boil, remove pan from heat and let cool. Marinate cucumbers in liquid and place in refrigerator for several hours.
