YELLOW CUCUMBER SWEET PICKLES | |
1 lg. grocery bag full of yellow cucumbers 2 c. pickling lime 1 1/2 qt. vinegar 9 c. sugar 3 tbsp. pickling spice 1/2 c. water 1 tsp. turmeric 4 tsp. salt Peel and seed a grocery sack full of yellow cucumbers. Cut into chunks approximately 1 1/2 to 2 inches long. Soak cucumbers for 24 hours in a solution of 2 gallons water and 2 cups pickling lime. At the end of 24 hours, wash the pickles 6 times in cool water, then soak for another 24 hours in a solution of vinegar, sugar, pickling spice, water, turmeric and salt. Boil about 15 minutes and pack into hot jars. |
