APPLE CUSTARD AND APPLE MERINGUE
PIE
 
Line pie tin with rich pastry dough. Pare cooking apples and arrange in 1/4 slices on dough. Bake 10 minutes at 450 degrees.

CUSTARD: Mix 1 cup milk with 2 beaten eggs. Sweeten to taste and add 1 teaspoon vanilla. Pour on apples and bake at 375 degrees until custard is set. Top with sugar and cinnamon.

MERINGUE: Cut up apples in quarters and steam until tender. Sprinkle with sugar and cinnamon and put into baked pie crust. Top with meringue made with egg white and sugar and put back into oven and bake until slightly brown.
