LOW FAT APRICOT CHICKEN 
2 whole chicken breasts, skinned, split & boned
1/4 c. low sodium soy sauce
1/2 jar sugarless apricot jam

Marinate chicken breasts in soy sauce about 1 hour. Cook chicken on bar-b-q or in oven. Combine soy sauce and apricot jam. Cook to thicken; just before serving baste with sauce. Place in oven, or on bar-b-q for another 5 minutes.
