LOW FAT CHICKEN CACCIATORE 
1 sm. onion, chopped
1/4 c. water
1 can whole tomatoes, chopped & drained
1/2 c. tomato puree
1 tsp. whole oregano
1/2 tsp. garlic powder
1/8 tsp. pepper
4 chicken breast halves (skinned)
2 c. hot cooked spaghetti

Combine onion and water in a 10 inch skillet. Cover and cook over medium heat 3-4 minutes. Stir in tomatoes, tomato puree and seasonings. Cover. Simmer for 10 minutes. Add chicken to skillet, spoon tomato mixture over chicken. Cover and simmer 30 minutes, uncover and simmer 15 more minutes. Serve over spaghetti.
