CHINESE PEPPER STEAK 
1 lb. beef chunks, cut in 1x3 inch strips
1 tsp. salt
1/4 c. cooking oil
2 tbsp. soy sauce
1 clove garlic, minced
1/2 c. water
1 green pepper, cut in strips
1 lg. onion, sliced
1/2 c. celery, sliced
2 tomatoes, cut in wedges
1 tbsp. cornstarch
1 c.water
Hot cooked rice

Season meat with salt. Brown meat in oil, in a large skillet. Add soy sauce, garlic and 1/2 cup water. Bring to boil, reduce heat, cover, simmer 45 minutes. Add green pepper, onion and celery. Cover, simmer 10 minutes. Add tomatoes. Combine cornstarch and 1 cup water. Slowly stir into mixture. Boil 1 minute. Serve on rice.
