CHINESE-STYLE PEPPER STEAK 
2 lbs. boneless round steak
1/4 c. vegetable oil
3 med.-size green peppers
1/2 c. onion, sliced long and thin
2 cloves garlic, minced
2 c. beef broth
1 tsp. salt
1/4 tsp. pepper
1/4 c. soy sauce
1/4 c. water
2 tbsp. cornstarch

Brown beef (cut in strips). Add onion and peppers. Cook awhile with beef. Add seasonings and broth until boiling. Simmer 15 minutes with lid. Combine soy sauce, water, and cornstarch. Add to beef and cook until thick. Serve over rice.
