CHINESE PEPPER STEAK 
1 lb. beef or steak cut in thin strips
1/4 c. cooking oil
1 clove garlic, minced
2 tbsp. soy sauce
1 tsp. salt
2 1/4 c. water
1 c. green peppers, cut into 1" pieces
1 c. chopped onions
1/2 c. chopped celery
2 tbsp. cornstarch
2 tomatoes, cut into 8ths
Rice, cooked

Put oil into pan; cut steak into strips. Brown beef. Add garlic; cook until yellow. Add soy sauce, salt and 1/4 cup water. Cook on low heat 45 minutes (may have to add a little more water to keep from scorching). Add vegetables; cook for 10 minutes. Stir in cornstarch, blended with 2 cups water. Add tomatoes. Cook for 5 minutes longer. Serve over cooked rice. Good on mashed potatoes or noodles also.
