MINI BUNDT CAKE | |
1 1/2 cups all-purpose flour 1/4 tsp. baking soda 1/2 tsp. salt 1/2 cup (1 stick) butter, softened 1 1/2 cups sugar 4 eggs 1 tsp. vanilla extract 2/3 cup dairy sour cream (or vanilla yogurt) Preheat oven to 350°F. Grease and dust with flour a 6-cup Bundt pan. In a small bowl, whisk together flour, baking soda and salt. In a mixing bowl, beat together butter and sugar until light and creamy. Add eggs, one at a time, beating well after each egg is added. Add vanilla, flour mixture and sour cream or yogurt. Blend until smooth. Pour into prepared 6 cup Bundt pan. Stir once through center to level. Bake at 350°F for 35 to 40 minutes or until a wooden pick inserted in center of cake comes out clean. Cool on wire rack for 10 minutes before inverting onto rack to cool completely. Drizzle with Confectioners Icing or dust with confectioners' sugar. Decorate with fruits and nuts, if desired. Note: Other flavorings may be used for the yogurt or instead of vanilla (such as lemon, orange, etc). Submitted by: Belle |
