POTATO KIELBASA CASSEROLE 
2 lg. sweet green or red pepper
2 med. onions
8 sm. red potatoes
12 oz. kielbasa
1/4 tsp. salt
1/4 tsp. pepper
1/4 c. olive oil
Parsley

Cut peppers into 1 1/2 inch pieces. Cut onion into wedges. Half potatoes. Cut kielbasa into 2 inch chunks. Coat all ingredients with oil. Place in a 1 1/2 quart casserole. Sprinkle with salt, pepper and parsley. Cover and bake at 400 degrees for 45 minutes.

I thought it was very flavorful and super easy to do. In addition to the above ingredients I also added baby carrots and some nice size mushrooms I had on hand. Needed another 15 minutes in the oven for everything to be done to perfection. Oh yeah, also used garlic salt instead of regular salt and I thought that added a nice flavor. Definitely a keeper.
