POTATO KIELBASA CASSEROLE | |
2 lg. sweet green or red pepper 2 med. onions 8 sm. red potatoes 12 oz. kielbasa 1/4 tsp. salt 1/4 tsp. pepper 1/4 c. olive oil Parsley Cut peppers into 1 1/2 inch pieces. Cut onion into wedges. Half potatoes. Cut kielbasa into 2 inch chunks. Coat all ingredients with oil. Place in a 1 1/2 quart casserole. Sprinkle with salt, pepper and parsley. Cover and bake at 400 degrees for 45 minutes. |
