POTATO, PEPPER AND KIELBASA
CASSEROLE
 
2 lg. green peppers
2 med. onions
1 lb. sm. red-skinned potatoes (about 8)
12 oz. kielbasa
Salt/pepper
1/2 c. heavy cream
1/4 c. olive oil

Preheat oven to 400 degrees.

Cut peppers into 1 1/2 inch pieces. Place in large bowl. Cut onions into thin wedges, add to peppers. Halve potatoes, add to other vegetables. Cut kielbasa into 1/2 inch thick slices, add to vegetables. Sprinkle with salt and pepper, toss with the olive oil.

Transfer mixture to a shallow 1 1/2 quart casserole dish. Cover. Bake for 45 minutes. Stir in the heavy cream. Cover and bake 10 more minutes until cream and oil have come together. Makes 4-5 servings.

I make this in the microwave when I need a quick tasty dinner. I use turkey kielbasa for a healthier version.
