POTATO-PEPPER AND KIELBASA
CASSEROLE
 
2 lg. sweet peppers, red or green
8 sm. red skinned potatoes
1/4 tsp. each salt and pepper
1/2 c. heavy cream
2 med. onions
12 oz. kielbasa
1/2 c. olive oil

Cut peppers into 1 1/2 inch strips. Cut onions into thin wedges. Halve potatoes. Skin kielbasa and cut into 1/2 inch slices. Toss together with salt and pepper and olive oil. Use 1 1/2 quart casserole at 400 degrees for 45 minutes. Drain excess oil. Stir in cream and bake 10 minutes more or until cream and oil come together and potatoes are done.
