POTATO-PEPPER-KIELBASA CASSEROLE 
1 lg. sweet pepper
1 med. onion
3 med. potatoes
12 or 26 oz. smoked sausage
1/4 tsp. salt
1/4 c. olive oil
1/2 c. cream (Half and Half)
Tomato wedges
Parsley garnish (optional)
1/4 tsp. pepper

Core and seed pepper; cut in 1 inch pieces. Place in large bowl. Cut onion in thin wedges and add. Peel and cube potatoes and add with tomato wedges. Peel casing from sausage and cut in 1/2 inch slices. Add to above and sprinkle with salt and pepper and toss all with olive oil. Place in shallow 7 x 11 inch casserole. Cover, bake in preheated 400 degree oven for 45 minutes. Stir in cream, cover, and bake 10 more minutes.
