EASY BAKED PEPPER CHICKEN 
It'll be the juiciest, most tender baked chicken you've ever had - no need for a knife. Best over rice and sautéed vegetables.

6 uncooked chicken breasts
2 cups onions and peppers (thinly sliced)
2 tsp. pepper
2 tsp. basil seasoning
1/4 cup olive oil, divided

Preheat oven to 350°F.

Line a deep (9x13-inch) baking pan with foil (this will reduce clean-up time) and seal the heat. Drizzle the foil layer with olive oil to avoid sticking. Sprinkle foil with some of the pepper and basil.

Lay the chicken breasts on the oil-seasoning mixture, spread out, and drizzle lightly with olive oil. Use a brush or spoon to distribute the oil evenly on top of the chicken. Sprinkle the chicken with remaining seasoning, to taste. Sprinkle the chicken with the onions and peppers.

Important: Cover the pan with another layer of foil, and seal the sides.

Bake at 350°F for 40 to 50 minutes, or until the center of the chicken is no longer pink.

Serves 6.

Tried this and had a problem. I used a half chicken not cut up. Don't know if this caused it, but after 45 min at 350°F the chicken was not near done. Can someone tell me where I failed?

It takes more time for a half chicken to cook than chicken breasts because they are in smaller portions. The cooking time also depends on the size or weight of the chicken. The larger the chicken, the longer it will take to cook.

I'm confused. Can't I just cook the chicken in a lidded, sealed cast iron pot and get the same result? I don't get the tin foil, except for assisting clean up... other than that does it have a purpose. Not very healthy to cook with. Well, about to try in cast iron.

I used boneless, skinless chicken breasts and baked the chicken in a disposable foil cake pan and the chicken came out GREAT. It was so juicy and full of flavor. I put the chicken on a bed of thinly sliced onions, seasoned the chicken w/Greek Seasoning and put more onions on top, covered it w/foil. It just took me 65 minutes at 350°F to fully cook the chicken w/out drying it out.

Oh my gosh I tried this recipe last night, and it turns out really good. Me and my husband loves it a lot , we had it for lunch today here at work. What I did tho is I baked is for 1 hour and 20 minutes which makes the chicken so tender and then I added some spice that i like and gosh the flavor is unbelievable. Thanks for sharing this recipe.

Got rave reviews on recipe but made these changes: Instead of foil liner, I spread oil on bottom of glass dish and covered with foil. Baked at 350°F for 1 hr, and broiled 10 mins without foil cover but larger pieces were not fully cooked. In the future, I will brown the larger pieces before baking and eliminate the broiling step.

This was my first baked chicken. I cooked (baked?) it for 50min, looked at it, and went 15 more minutes. I had 3 chicken breasts in a 9x9 pan. I'm eating it right now and it's goood.

I love this recipe! SO EASY!!! But instead of breast I used tenderloins and Italian seasoning. It only took 30 minutes and they were very moist! LOVED it and will definitely use it again, thanks!

I followed the recipe exactly with the exception of the foil - I used a casserole dish. I cooked it for 1 1/2hrs

My chicken didn't really bake, kind of stewed in the sauce that gets created from onions and peppers.

It was a little bland so I added 2 tbsp. tomato paste, and some saffron and baked it for another 20 minutes. FANTASTICO!

I followed the recipe exactly and cooked in 45 mins was perfect but slightly bland added homemade garlic salt ....just a sprinkle and we loved it.

I'm confused by "basil seasoning". Are we talking about just dried basil, the herb? Or is it some seasoning blend that has basil in it? Gotta ask, because I'd interpret this as dried basil; but then the recipe has no salt. Can we get some clarification? And if it's a seasoning blend, could the author recommend a brand that works?
