VEGETABLE QUICHE (LOW CALORIE) 
2 1/2 c. raw vegetables
4 oz. grated cheese
4 oz. grated onion
1 c. Pet evaporated milk
4 tbsp. flour
4 eggs
1 tsp. baking powder
1 tsp. salt
1/2 tsp. pepper
4 tsp. vegetable oil

Raw vegetables: cauliflower, broccoli, zucchini, squash. Place vegetables in 10 inch pie pan; cover with grated cheese and onion. In blender, place milk, flour, eggs, baking powder, salt, pepper, and vegetable oil. Blend for 15 seconds. Pour over vegetables and cheese. Bake at 375 degrees for 20-25 minutes.
