CORN SLAW | |
4 c. shredded cabbage 8 oz. whole kernel corn, drained 1 sm. onion, grated 1 tbsp. vinegar 1 tsp. sugar 1/2 tsp. salt 1/8 tsp. pepper 1/2 c. mayonnaise 1 diced red apple or 1/2 c. raisins 2 or 3 crisp savoy-cabbage leaves Shred cabbage to make 4 cups. Combine in bowl with corn, onion, vinegar, sugar, salt and pepper. Chill for 1 hour, then mix lightly with mayonnaise and fold in apple or raisins. Serve plain or pile into savoy-cabbage leaves shaped into a cup. Makes 6 servings. |
