SPICY ZUCCHINI BREAD 
3 c. all-purpose flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
1 tsp. nutmeg
1 c. pecans, chopped
3/4 c. vegetable oil
3 eggs
2 c. sugar
2 tsp. vanilla flavoring
3 c. zucchini (unpeeled), shredded

Combine first 6 ingredients in a mixing bowl. Make a well in center of mixture. Combine oil, eggs, sugar and vanilla; mix well. Stir in zucchini. Add to dry ingredients, stirring just until moistened. Spoon mixture into 2 greased and floured 8 1/2 x 4 1/2 x 3-inch loaf pans.

Bake at 350 degrees for 1 hour. Cool in pans for 10 minutes. Remove to rack.
