SPICY PINEAPPLE ZUCCHINI BREAD 
3 eggs
1 c. oil
2 c. sugar
2 tsp. vanilla
2 c. shredded zucchini
1 c. crushed pineapple, drained
3 c. flour
2 tsp. baking soda
1 tsp. salt
1/2 tsp. baking powder
1/2 tsp. cinnamon
3/4 tsp. nutmeg
1 c. nuts
1 c. dates or raisins

Beat eggs with mixer to blend. Add oil, sugar, and vanilla. Mix until thick and foamy. Stir in zucchini and pineapple. Combine flour and dry ingredients. Stir gently into egg mixture with nuts and date, or raisins until just blended.

Bake in loaf pans at 350 degrees for 1 hour. Cool in pan 10 minutes. Makes 3 medium loaves.
