SPICY PINEAPPLE ZUCCHINI BREAD 
3 eggs
1 c. salad oil
2 c. sugar
2 tsp. vanilla
2 c. ground zucchini
1 c. crushed pineapple
3 c flour
2 tsp. baking soda
1 tsp. salt
1/2 tsp. baking powder
1 1/2 tsp. cinnamon
3/4 tsp. nutmeg
1 c. raisins & nuts

Beat eggs, add oil, sugar and vanilla. Beat until thick and foamy. Blend in flour, soda, salt, baking powder, cinnamon and nutmeg. Add ground zucchini, nuts and raisins. Bake in 2 well greased (use Pam) loaf pans. Bake at 350 degrees for 1 hour. Cool 10 minutes before removing from pans. Wrap in wax paper and refrigerate. May also use recipe for bars. Bake only 30 minutes. Frost with cream cheese frosting.
