PINEAPPLE ZUCCHINI BREAD | |
3 eggs 2 c. sugar 2 tsp. vanilla 1 c. cooking oil 2 c. zucchini, peeled, grated & drained 3 c. flour 1 tsp. baking powder 1 tsp. salt 1 tsp. baking soda 1 c. crushed pineapple, drained 1/2 c. dates 1 c. chopped nuts Beat eggs, sugar, vanilla and oil until fluffy. Add the zucchini then add the dry ingredients and mix well. Stir in the pineapple, dates and nuts. Bake in 2 greased and floured 9"x5"x2" loaf pans for 1 hour at 325 degrees. Makes 2 loaves. |
