SPICY PINEAPPLE ZUCCHINI BREAD | |
1 c. salad oil 3 eggs 2 c. sugar 2 tsp. vanilla 2 c. shredded zucchini 1 c. crushed pineapple 3 c. flour 2 tsp. baking soda 1 tsp. salt 1/2 tsp. baking powder 1 1/2 tsp. cinnamon 3/4 tsp. nutmeg 1 c. chopped nuts 1 c. raisins 1. Beat oil, eggs and sugar until thick and foamy. 2. Stir in zucchini and pineapple. 3. Add dry ingredients. 4. Stir in nuts and raisins. Bake in 2 greased and floured 9" loaf pans at 350 degrees for 60 minutes. Cool 10 minutes. Turn out on wire rack to finish cooling. |
