TOMATO GRAVY 
2 lbs. Jersey tomatoes
1/4 lb. butter
1 1/2 c. milk
3 tbsp. flour
Salt & pepper to taste
8 slices toast

STEP 1: Blanch, then peel tomatoes.

STEP II: In frying pan, melt butter, then add sliced, peeled tomatoes. Cook down.

STEP III: Take enough milk and add to flour. Mix in cup until smooth.

STEP IV: Take remaining milk and add to tomatoes. While stirring, take flour mixture and combine with tomatoes and milk. Continue stirring until thickened. Add salt and pepper to taste.

STEP V: Toast and butter 8 slices of bread.

STEP VI: Proceed to pour tomato gravy over toasted bread. Serves 4.
