SPICY ZUCCHINI BREAD 
3 c. all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. ground cinnamon
1 tsp. nutmeg
1 c. chopped pecans
3/4 c. vegetable oil
2 c. sugar
3 eggs
3 c. unpeeled shredded zucchini

Combine first 5 ingredients in mixing bowl, making a well in center of mixture. Combine oil, eggs, sugar and vanilla; mix well. Stir in zucchini. Add mixture to dry ingredients, stirring just until moistened. Spoon mixture into 2 greased and floured loaf pans. Bake at 350 degrees for 1 hour. Cool loaves 10 minutes in pan. Remove to wire rack and cool. Makes 2 loaves.
