PINEAPPLE-ZUCCHINI BREAD 
3 c. flour
1 tsp. baking powder
1 tsp. salt
1 tsp. baking soda
1 c. oil
2 c. peeled, grated and drained zucchini
3 eggs
2 c. sugar
2 tsp. vanilla
1 c. drained, crushed pineapple
1 c. nuts, optional

Blend dry ingredients. Add eggs, oil, vanilla, pineapple, zucchini and nuts. Bake in two loaf pans or one cake pan which has been greased and floured for one hour at 325 degrees.
