ZUCCHINI-PINEAPPLE BREAD | |
3 eggs 1 c. salad oil 2 c. sugar 2 tsp. vanilla 2 c. shredded zucchini (leave skin on) 1 lg. can drained, crushed pineapple 3 c. flour 2 tsp. baking soda 1 tsp. salt 1/2 tsp. baking powder 1 1/2 tsp. cinnamon 3/4 tsp. nutmeg 1 c. nuts, chopped 1 c. raisins (opt.) Combine eggs, oil, sugar and vanilla. Blend and add the zucchini. Stir in pineapple. Sift remaining ingredients and add. Bake in greased loaf pan at 350 degrees for 1 hour. |
