SPICY ZUCCHINI NUT BREAD 
3 eggs
2 c. sugar
2 c. raw grated zucchini
2 tsp. vanilla
3 c. flour
1 c. oil
3 tsp. cinnamon
2 tsp. baking soda
1 tsp. salt
1/2 tsp. baking powder

Beat eggs until froth, stir in oil, sugar, and vanilla until thick and lemony. Add zucchini. Sift all dry ingredients together and blend well into egg mixture. Fold in nuts if desired. Pour into 2 loaf pans and bake at 350 degrees for approximately 1 hour. Brown sugar can be used instead of white.
