ZUCCHINI NUT BREAD | |
1/2 c. chopped walnuts 2 c. all-purpose flour 1 tbsp. baking powder 1/2 tsp. baking soda 1 tsp. salt 10 oz. shredded zucchini 2 lg. fresh eggs 2/3 c. vegetable oil 1 c. packed light brown sugar 2 tsp. ground cinnamon 2 tsp. vanilla 1/2 c. mini chocolate chips Preheat oven to 350 degrees. Metal blade, put walnuts, flour, baking powder, baking soda and salt in the work bowl and process until nuts are coarsely chopped. Set aside. Shredding dish, put zucchini in feed tube vertically and shred using medium pressure. Metal blade, add eggs, oil, brown sugar, cinnamon, and vanilla. Combine mixture by turning the machine on/off 4 times then process 1 minute. |
