BAKED SHRIMP IN RITZ CRACKERS 
2-3 lbs. med. shrimp (cleaned, if fresh, thawed if frozen)
1 tsp. parsley
2 tsp. grated cheese
1 1/2 sticks butter
1 strip Ritz crackers

Butter casserole dish good. Take shrimp and layer in dish (around edges with tails on, in middle no tails).

Crush strip of Ritz crackers into crumbs. Melt butter, add cheese, parsley and mix into crumbs. Pour mixture and spread over shrimp. Bake at 325 degrees for 20 minutes. Check shrimp to see if done, if not, 10 more minutes. Enjoy.

This is Mad Men era food. I remember this from "fancy" sea food restaurants near Portsmouth NH and Southern Maine and cooked it as sort of an homage to my deceased God-mother who used to order it. It's very fat rich so if you're going to splurge buy the best butter you can. the charm of the dish is the American simplicity so don't go all fusion/modern on it with herbs, wine, etc. It does need lemon and you do have to keep portions small but if you take it for what it is. The recipe is perfect.
