MEXICAN CHICKEN 
2 pkgs. chicken thighs
1 bag Doritos or corn tortilla chips
1 lg. bag of grated cheddar cheese
1 can of Rotel
1 can cream of celery soup
1 can cream of mushroom soup
1 can cream of chicken soup

Boil chicken, deskin and debone. Crunch up chips. Mix Rotel and 3 soups in separate bowl. Now in baking dish, put 1 layer of chips, 1 layer of chicken, 1 layer of soup mix and 1 layer of cheese. Repeat the above. Bake at 350 degrees until hot and melted.
