SPICY ZUCCHINI BREAD 
3 c. flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. nutmeg
1 c. chopped pecans
3/4 c. vegetable oil
3 eggs
2 c. sugar
2 tsp. vanilla
3 c. shredded zucchini

Combine first 6 ingredients. Combine oil, eggs, sugar and vanilla; mix well. Stir in zucchini. Add mixture to dry ingredients, stirring until moistened. Spoon into 2 greased loaf pans. Bake at 350 degrees for 1 hour. Cool 10 minutes and remove from pans.
