SPICY ZUCCHINI BREAD 
3 eggs
1 c. oil
2 tsp. vanilla
2 c. shredded zucchini
1 can crushed pineapple, drained
2 c. sugar
3 c. flour
2 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1 c. raisins
1 c. chopped nuts

Beat eggs, add oil, sugar and vanilla. Beat until thick and foamy. Combine remaining ingredients. Stir gently into zucchini mixture. Pour into greased and floured loaf pans. Bake at 350 degrees for one hour. Cool in pan for 10 minutes. Remove to rack to cool.
