BROCCOLI, HAM AND RICE PIE 
2 lg. eggs
2 c. cooked brown rice
4 oz. lean boiled or baked ham, diced
1 (4 oz.) can green chilies, drained
1/4 to 1/2 tsp. salt
Few grains of pepper
4 oz. grated sharp Cheddar cheese
1 (10 oz.) pkg. frozen broccoli spears, rinsed with hot water to separate & thaw

Heat oven to 350 degrees. Beat eggs in a medium sized bowl. Stir in rice, ham, chilies, salt, pepper and half the cheese. Spoon into a 10 inch pie plate or quiche dish that has been coated with vegetable cookware spray and press mixture over bottom and slightly up sides of dish. Bake 10 minutes. Arrange broccoli spears in a circular pattern on top of rice trimming stalks to fit. Sprinkle remaining cheese over broccoli stalks. Bake 5 to 8 minutes longer, until broccoli is heated and cheese has melted. Let stand 10 minutes before serving. Makes 4 servings.
